Download ImageBirthday Cupcakes Ingredients– 250g Unsalted butter (softened)– 250g Caster Sugar– 4 Medium Eggs– 250g Self Raising Flour– 2 tsp Vanilla Extract– 12 tsp Strawberry Jam– 12 cupcake cases– Buttercream recipe as previous post, for these cupcakes x2 batchesSteps1 Preheat the oven to 180C (gas mark 4), and line a tin with 12 cupcake cases2 In a large bowl cream together the butter and sugar until pale and fluffy3 Add the eggs, one at a time mixing well between each addition, then add the vanilla extract4 Carefully fold in the flour then spoon into the cupcakes cases, until they are about 2/3 full5 Bake in the oven for 25 minutes or until a skewer comes out clean and leave to cool completely on a cooling wire6 Once cooled, score a hole from the centre of each cupcake using a small bottle cap and fill with a teaspoon of jam Cover back up with the sponge removed and push down slightly for an even top7 Prepare the buttercream, (these cupcakes require two lots of plain buttercream) separate into 3 mixing bowls and add food colouring as required8 Pipe using different nozzles, used here are Wilton 2D and 1M Decorate with sprinkles Source : www.instagram.com
