Download ImageIngredients (Makes 25 Medium Sized Falafel Balls)2 cups dried chickpeas (or 4 cups cooked)Parsley leaves (around 50g)Coriander leaves (around 50g)1 onion2 garlic cloves1/2 tsp salt1/2 tsp baking powder1 tsp each Ground cumin, black pepperOlive oil for brushingStepsSoak the chickpeas overnight.Place in a food processor along with the roughly chopped parsley, coriander, onion and garlic.Blend until you get a crumbled texture. Add all the seasoning, along with the baking powder and mix by hand.Shape the falafel balls by hand into the size you prefer (if the mix is too dry and falling apart, add water.If too mushy, add flour). Place them on a baking sheet, brush with olive oil and bake for 15-20 minutes on 240 degrees (you can broil the last few minutes until they turn brown).Enjoy with veggies and tahini dip!**N.B.
