Bahan Soto Udang Kuah Kuning Bening<\/h2>\n

350 gram udang, kupas kulit dan kepala udang dan sisihkan (untuk kuah kaldu)
\n1 batang serai, geprek
\n2 lembar daun salam
\n2 lembar daun jeruk
\n1 ruas lengkuas, geprek
\n1 batang daun bawang, rajang
\n2 buah kapulaga
\n1 batang kecil kayu manis
\n1 buah bunga lawang
\nSedikit minyak goreng untuk menumis
\n1 liter air
\nGaram dan gula pasir secukupnya
\n1 sdt kaldu jamur bubuk (optional)<\/p>\n

5 siung bawang merah
\n4 siung bawang putih
\n1\/2 sdt merica butiran
\n1 sdt jinten
\n1 sdt ketumbar
\n3 butir kemiri sangrai
\n1 cm jahe
\n1 ruas kunyit<\/p>\n

Cara Membuat Soto Udang Kuah Kuning Bening<\/h2>\n

Rebus kulit dan kepala udang yang sudah dibersihkan dengan 200 ml air hingga mendidih dan mengeluarkan kaldu.
\nAngkat dan saring kulit dan kepala udang, sisihkan.
\nTumis bumbu halus, daun jeruk,daun salam, serai, lengkuas, kayu manis, bunga lawang, kapulaga hingga matang dan harum. Matikan api.
\nTuang bumbu soto kedalam panci yang berisi air kaldu udang dan sisa air. Masukkan garam,kaldu jamur bubuk dan gula pasir secukupnya, koreksi rasa dan masak hingga mendidih.
\nLalu masukkan udang, rajangan daun bawang dan rebus sebentar saja, lalu matikan api.<\/p>\n

Penyajian<\/h2>\n

Susun sohun\/bihun jagung, tauge lalu siram kuah soto. Beri telur rebus, daun bawang,daun seledri dan bawang goreng.
