{"id":9965,"date":"2022-05-20T08:43:00","date_gmt":"2022-05-20T00:43:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=9965"},"modified":"2026-03-09T20:48:58","modified_gmt":"2026-03-09T12:48:58","slug":"buffalo-bison-bolognese-over-garlicky-spaghetti-squash-with-a-dollop-of-ricotta-anexplorerskitchen","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/buffalo-bison-bolognese-over-garlicky-spaghetti-squash-with-a-dollop-of-ricotta-anexplorerskitchen","title":{"rendered":"Buffalo\/bison Bolognese Over Garlicky Spaghetti Squash With A Dollop Of Ricotta"},"content":{"rendered":"<h2>Ingredients Squash<\/h2>\n<p>1 spaghetti squash<br \/>\n1\u20444 cup olive oil, divided<br \/>\n1 tsp garlic salt<br \/>\npepper<br \/>\n1\u20442 cup shredded parmesan<br \/>\n3 Tbs fresh parsley, chopped<\/p>\n<h2>Ingredients Buffalo\/bison Bolognese<\/h2>\n<p>1 lb buffalo\/bison or beef or vegetarian alternative such as soy mince or tempeh<br \/>\n1 Tbs fennel seeds<br \/>\n1 Tbs olive oil<br \/>\n1\u20442 red onion, chopped<br \/>\n2 cloves garlic<br \/>\n1 cup marinara sauce<br \/>\n1 can diced tomatoes<br \/>\n1\u20442 cup red wine<br \/>\n1 tsp dried oregano<br \/>\n1 tsp dried basil<br \/>\n1\u20442 tsp garlic salt<br \/>\n1 Tbs sugar<br \/>\n1 1\/2 Tbs fresh rosemary<br \/>\n2 Tbs fresh parsley, chopped<\/p>\n<h2>Directions<\/h2>\n<p>1. Preheat oven to 400 degrees. Cut spaghetti squash in half lengthwise. Rub with 1 Tbs olive oil, sprinkle with salt &amp; pepper. Place cut side down on cookie sheet. Bake 35 minutes.<br \/>\n2. Brown meat in a large skillet. Remove to plate. Place 1 Tbs oil in skillet. Add onion &amp; saute\u0301 1 minute. Add garlic &amp; saute\u0301 30 seconds. Pour in tomatoes, marinara &amp; wine. Add meat to sauce. Stir in fennel, oregano, basil, garlic salt &amp; pepper, simmer 5 minutes. Stir in parsley &amp; rosemary. Simmer an additional 5 minutes.<br \/>\n3. Remove spaghetti squash from oven. Use a fork working it horizontally to scrape off the squash strands trying not to break them, but just separate them. In a small bowl mix the squash strands with the olive oil, Parmesan, parsley, garlic salt &amp; pepper.<br \/>\n4. Serve the bolognese over the spaghetti squash. You can either serve it on a platter or fill the empty squash hulls using them as a bowl.<br \/>\n5. Top with fresh ricotta &amp; decorate with fresh rosemary &amp; parsley.
