Wash all lettuces. Mix, pile on plates.<br \/>\n2. Rinse shallots for 30 seconds to reduce their bite. Whip the olive oil, mustards, vinegar and honey together. Strip the thyme leaves from their stalk and stir in the thyme, grated garlic and minced shallot. Add salt and pepper to taste.<br \/>\n3.
