{"id":9648,"date":"2022-05-14T07:10:00","date_gmt":"2022-05-13T23:10:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=9648"},"modified":"2026-03-09T20:50:19","modified_gmt":"2026-03-09T12:50:19","slug":"pasta-alla-checca-anexplorerskitchen","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/pasta-alla-checca-anexplorerskitchen","title":{"rendered":"Pasta Alla Checca"},"content":{"rendered":"<h2>Pasta Alla Checca Ingredients<\/h2>\n<p>16 oz pasta<br \/>\n2 cups chopped tomatoes<br \/>\n1 cup fresh basil, roughly chopped<br \/>\n2 cups fresh, soft mozzarella, mini balls or large balls chopped into 2\u20443 inch pieces<br \/>\n1 cup shaved Parmesan cheese<br \/>\n2 garlic cloves, grated<br \/>\n2\/3 to 1 cup high quality pure olive oil<br \/>\n1\u20442 cup reserved cooking water from<br \/>\nthe pasta<br \/>\n1 tsp garlic salt<br \/>\n1 tsp himalayan salt<br \/>\n1\u20442 tsp freshly ground pepper<\/p>\n<h2>Directions<\/h2>\n<p>1. Chop the tomatoes, remove the excess seeds. It&#8217;s not necessary to remove all the seeds but we remove about 2\u20443 of them. If using cherry tomatoes, cut them in half and lightly squeeze out some of the seeds without squishing the tomatoes too much.<br \/>\n2. Toss the tomatoes in a bowl with the 1 tsp of garlic salt and the grated garlic. Do not discard the tomato water that the tomatoes let out, it will become part of the sauce.<br \/>\n3. Cook pasta until al dente, still slightly firm. Before draining, remove 1 cup of water from the pot.<br \/>\n4. Drain pasta and quickly toss with all of the ingredients. The recipe says to reserve 1 cup of cooking water, but we only used 1\u20442 cup. You can also use only 2\u20443 cup olive oil, but the flavor is better and silkier with more. The warm pasta melts the cheese ever so slightly.<br \/>\n5. Salt and pepper to taste . We used an extra teaspoon of Himalayan salt.<br \/>\n6.
