Put coconut oil and the green curry paste in a pot with medium high heat and saute\u0301 about 2 mins, until the curry fully releases its aroma.<br \/>\n2. Add coconut milk, palm sugar, fish sauce and water into the paste, bring to a boil and let the sugar dissolve.<br \/>\n3. Add chopped bamboo shoots and fried tofu and bring to a boil. Then lower the heat, and let it simmer for about 5 minutes so the flavors can come together.<br \/>\n4. Garnish with basil leaves and chili pepper and you are ready to have this authentic Thai curry.
