Once the chicken has cooled shred and set aside.<\/p>\n<h2>For The Rice<\/h2>\n<p>2 cups Jasmin rice, washed &amp; drained<br \/>\n3 cups chicken stock (reserved from boiling your chicken)<br \/>\n1 lb lean ground beef<br \/>\n4 tbsp vegetable oil, divided<br \/>\n1 tsp salt<br \/>\n1 1\/2 tsp 7 spices<br \/>\n1\/2 tsp cinnamon more for garnish<br \/>\n1\/2 tsp cumin<br \/>\n1\/4 cup almonds (soaked in water for few hours &amp; then peeled)<br \/>\n1\/4 cup pine nuts<\/p>\n<h2>Steps Making Rice<\/h2>\n<p>In a pot heat 2 tbsp oil, add ground beef and cook until browned.<br \/>\nAdd spices &amp; rice and mix to coat the rice with the spices.<br \/>\nAdd chicken stock and bring to a boil.<br \/>\nReduce heat to low, cover and simmer for 15-20 minutes.<br \/>\nIn a saucepan heat 2 tbsp oil. Add almond and toast until light golden brown.<br \/>\nAdd pine nuts and toast for a few more minutes.<\/p>\n<h2>For The Cucumber Yogurt Salad<\/h2>\n<p>1 1\/2 (750g) Astro Yogurt (Original Balkan Plain 6%)<br \/>\n6 mini cucumbers diced<br \/>\n2-3 garlic cloves, minced<br \/>\n2 tbsp water<br \/>\n1 tsp dried mint leaves<br \/>\n1\/2 tsp salt more to taste<br \/>\nolive oil for drizzling<\/p>\n<h2>Steps Making Salad<\/h2>\n<p>Add yogurt &amp; water in a large bowl. Mix in diced cucumbers, garlic, salt &amp; dried mint. Drizzle with olive oil.<\/p>\n<h2>Assemble<\/h2>\n<p>place rice mixture on a serving platter.<br \/>\nCover with shredded chicken, sprinkle with cinnamon &amp; garnish with toasted almonds and pine nuts.<br \/>\nServe with cucumber yogurt salad.
