{"id":8589,"date":"2022-04-30T14:43:00","date_gmt":"2022-04-30T06:43:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=8589"},"modified":"2026-03-09T20:52:20","modified_gmt":"2026-03-09T12:52:20","slug":"mums-spicy-vegetable-rice-cooksbyson","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/mums-spicy-vegetable-rice-cooksbyson","title":{"rendered":"Mum&#8217;s Spicy Vegetable Rice"},"content":{"rendered":"<h2>Mum&#8217;s Spicy Vegetable Rice Ingredients;<\/h2>\n<p>175g Tilda pure basmati rice<br \/>\nA knob of butter<br \/>\n1 tsp salt<br \/>\n2 tbsp vegetable oil<br \/>\n2 small onions (diced)<br \/>\n1 rounded tsp jeera seeds<br \/>\nHandful of frozen mixed veg<br \/>\nHandful of peas<br \/>\nHandful of sweetcorn<br \/>\n1 carrot (diced)<br \/>\n2 small potatoes (diced)<br \/>\nHandful of chopped cabbage<br \/>\nHandful of chopped aubergine<br \/>\nHandful of diced paneer<br \/>\nA knob of butter<br \/>\n1 1\/2 tsp (refrigerated mixed masala: garlic, ginger, green chilli, coriander, salt and tumeric)<br \/>\n1 rounded tsp tumeric<br \/>\n1 rounded tsp salt<br \/>\n1 heaped tsp dhana jeeru powder<\/p>\n<h2>Method<\/h2>\n<p>1. In a small bowl let the rice soak in water for about 15 minutes then rinse 3 times using cold water each time.<br \/>\n2. Transfer the rice into a saucepan along with 4 small glasses of water, the butter and salt. Leave to boil on a high flame until it bubbles, then reduce heat and let simmer for 5 &#8211; 7 minutes, stirring as you go along. Check to see that the rice is half cooked, drain the rice and leave to the side.<br \/>\n3. In a wok, heat the oil and add the jeera seeds until they begin to begin to pop. Then add the onions and fry on a high flame until they start to brown.<br \/>\n4. Reduce the flame and add the chopped vegetables and the butter; cover for about 7-8 minutes until fragrant.<br \/>\n5. Mix in the remaining powders and masala and cook until all the vegetables are soft. Then add the rice as prepared earlier and stir on a high flame for a few minutes.<br \/>\n6. If the mixture is slightly dry add in a couple of spoons of water, lower the flame and let cook for a further 10-15minutes.
