{"id":8550,"date":"2022-04-30T08:23:00","date_gmt":"2022-04-30T00:23:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=8550"},"modified":"2026-03-09T20:52:31","modified_gmt":"2026-03-09T12:52:31","slug":"pempek-kapal-selam-indonesian-fried-fish-cake-stirwithme","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/pempek-kapal-selam-indonesian-fried-fish-cake-stirwithme","title":{"rendered":"Pempek Kapal Selam (Indonesian Fried Fish Cake)"},"content":{"rendered":"<h2>Pempek Kapal Selam (Indonesian Fried Fish Cake) Ingredients<\/h2>\n<p><em><strong>FISH CAKE :<\/strong><\/em><br \/>\n600 gr mackerel fish fillet (boneless) or (ground 550 gr)<br \/>\n400 gr tapioca flour plus more for dusting<br \/>\n1 1\/2 tbsp salt<br \/>\n1 tbsp msg<br \/>\n200 ml Ice water<br \/>\n150 gr egg whites<br \/>\n15 egg yolks<br \/>\nWater for boiling<br \/>\nOil for deep fry<br \/>\nDiced cucumber<br \/>\n<em><strong>SAUCE\/ CUKO :<\/strong><\/em><br \/>\n1 L water<br \/>\n400 gr palm sugar<br \/>\n100 gr long chili<br \/>\n10 bird\u2019s eye chili\/thai chili (adjust to taste)<br \/>\n17 garlic cloves<br \/>\n3 tbsp tamarind liquid<br \/>\n3 tbsp rice vinegar<br \/>\n2 1\/2 tsp salt<\/p>\n<h2>Steps<\/h2>\n<p><em><strong>SAUCE<\/strong><\/em><br \/>\n1. Blend chilies and garlic with 50 ml water in a food processor until smooth and pasty. Set aside<br \/>\n2. Boil 1 L of water in a pot or deep pan, add in the chili garlic mixture, along with the rest of the ingredients<br \/>\n3. Stir and let it simmer for 10-15 mins. Off the heat and set aside<br \/>\n<em><strong>FISH CAKE<\/strong><\/em><br \/>\n1. Scrape fish flesh using a spoon, when done discard skin (or you can get 550 gr ground mackerel fish) then transfer into a food processor<br \/>\nBlend fish until smooth and pasty<br \/>\n2. Add water gradually, then add egg whites and blend<br \/>\n3. Add msg and salt, blend again until well combined<br \/>\n4. Transfer into a bowl, add tapioca flour gradually while mixing it using a spatula gently and don&#8217;t over mix to prevent fish cake from turning tough, mix until combined, End dough will be sticky<br \/>\n5. Fill a big pot 1\/2-3\/4 way with water, boil and add 2 tbsp oil<br \/>\n6. Sprinkle work surfaces and coat your hand with flour. divide dough into 15 equal pieces, each weigh around 80gr<br \/>\n7. Take one and place onto the working surface, roll into a 10 cm log gently, lift it and make a hole on one end of the log using your thumb, creating a big well (shown on the video)<br \/>\n8. Place an egg yolk inside, then pinch from right-left to close<br \/>\n9. Immediately transfer into the boiling water and let it cook for 10-12 mins. Do the remaining. Strain and let them cool completely<br \/>\n10. Heat oil in a pan, in a very hot oil shallow or deep fry the fishcake until golden.
