Preheat the oven to 325 degree F and grease a 9&#215;5 loaf pan<br \/>\n2. In a large bowl, whisk oil and maple syrup together. Add the eggs and beat well, then whisk the mashed bananas and milk.<br \/>\n3. Add baking soda, vanilla extract, and cinnamon and blend well. Lastly, stir in the flour just until combined. Fold in nuts if using<br \/>\n4. Pour the batter into the greased pan. Place in the center rack and bake for 55-60 minutes, and check with the inserted toothpick into the center to come out clean.<br \/>\n5. Rest in pan for 5-10 minutes to cool down enough to be handled.
