Use a stand mixer, using the panel attachment, cream butter and monk fruit sweetener until fluffy, about 2-3 minutes, add peppermint extract<br \/>\n2. Add eggs, beat one at a time until incorporated well, scrape down from the side of the bowl if needed.<br \/>\n3. Take the bowl out of the mixer, stir in flour, cocoa powder, baking soda and baking powder until well combined<br \/>\n4. Fold in chocolate chips in the batter, and chill the dough in the refrigerator for about 10 minutes. Preheat the oven to 350F<br \/>\n5. Form the dough into 24 balls and place them on parchment lined baking tray, press down the top a little bit<br \/>\n6.
