fry<\/p>\n<h2>Marination<\/h2>\n<p>2 tbsp minced garlic<br \/>\n2 tsp ground coriander<br \/>\n2 tsp white pepper<br \/>\n1 tsp chicken stock powder<br \/>\n1 1\/2 tsp Salt<\/p>\n<h2>Wet Flour Mixture<\/h2>\n<p>2 eggs<br \/>\n1 cup flour<br \/>\n1 cup cold soda water<br \/>\n1 tsp salt<\/p>\n<h2>Dry Flour Mixture<\/h2>\n<p>1 tsp Baking powder<br \/>\n1 1\/2 cup APF<br \/>\n1 cup Cornflour<br \/>\n1\/2 tsp salt<\/p>\n<h2>Sambal<\/h2>\n<p>50 bird eye chili (adjust to taste)<br \/>\n15-20 long chili<br \/>\n9 garlic cloves<br \/>\n1\/2 tsp Chicken stock powder<br \/>\n1\/2-1 tsp salt (adjust to taste)<br \/>\n2-3 tsp sugar<br \/>\n1\/3 cup hot Oil (fried chicken oil)<\/p>\n<h2>Rice<\/h2>\n<p>15 kg warm\/hot cooked rice<br \/>\nA bowl of water and round cookie cutter<\/p>\n<h2>Topping<\/h2>\n<p>Lettuce<br \/>\nA bunch Basil leaves<br \/>\nTomatoes, thinly sliced<br \/>\nCucumber, thinly sliced<br \/>\nSliced Cheese<\/p>\n<h2>Steps<\/h2>\n<p><em><strong>Rice:<\/strong><\/em><br \/>\nDip cookie cutter into water and use it to form rice into patty Make 10-12 patties<br \/>\nIn a non stick pan, drizzle a tbsp olive oil Over high heat, pan fry rice patties on both sides until slightly golden and a little crisp Set aside<br \/>\n<em><strong>Sambal:<\/strong><\/em><br \/>\nCombine all sambal ingredients except the hot oil into a mortar and pestle, \u201cOelek\u201d or pound the ingredients roughly and set a side or roughly chop using food processor<br \/>\n<em><strong>Chicken:<\/strong><\/em><br \/>\nCombine marinade ingredients and chicken in a big bowl set in the fridge for 30 mins while prepping the other ingredients<br \/>\nCombine dry flour ingredients mixture in a big shallow bowl<br \/>\nCombine wet flour ingredients in a bowl, whisk well until creamy in consistency and no lump Dip the marinated chicken into the batter, transfer chicken into the dry flour mixture along with some of the batter Coat Chicken well<br \/>\nHeat good amount of oil in a large deep pan, over medium hot oil, fry chicken in 2-3 batches (dont over crowd the pan) for 10-15 mins Remove the chicken<br \/>\nTurn the heat to high, double fry chicken for another 30-40 sec each batch, remove and drain onto a wire rack<br \/>\nImmediately, Pour out 1\/3 cup of the piping hot fried chicken oil into the sambal mixture and mix<br \/>\n<em><strong>Assemble:<\/strong><\/em><br \/>\nplace a rice patty for the first layer, followed by lettuce, chicken, 1-2 tbsp of sambal, 2 slices of cheese, cucumber,
