Mix all ingredients except oil and eggplant<br \/>\n2 . Take 1\/2 cup of the dry ingredients into another bowl then mix in with water until thick<br \/>\n3. Cut eggplant into 5-6cm long<br \/>\n4. Place eggplant in an upright position and cut it into criss cross pattern and use a pair of chopstick to prevent cutting it all the way down<br \/>\n5. Dip into the batter and make sure to coat well in every nooks and creases<br \/>\n6. Then dredge well with the dry flour mixture<br \/>\n7.\u00a0 Heat oil in a deep pan, fry eggplant flower side down into the hot oil over medium heat for 2 mins each sides until crispy and golden brown Fry them in batches<br \/>\n8.
