{"id":7788,"date":"2022-04-20T14:10:00","date_gmt":"2022-04-20T06:10:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=7788"},"modified":"2026-03-09T20:54:38","modified_gmt":"2026-03-09T12:54:38","slug":"stuffed-zucchini-koussa-mihshi-mouracooks","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/stuffed-zucchini-koussa-mihshi-mouracooks","title":{"rendered":"Stuffed Zucchini (Koussa Mihshi)"},"content":{"rendered":"<h2>Stuffed Zucchini (Koussa Mihshi) Ingredients<\/h2>\n<p>12-15 zucchinis (depending on size)<br \/>\n1\/2 lb ground beef<br \/>\n1 cup rice, washed &amp; drained<br \/>\n1 onion, diced<br \/>\n2 tomatoes, diced<br \/>\n5 tbsp tomato paste<br \/>\n6 garlic gloves, grated<br \/>\n1 tsp 7 spice (or allspice)<br \/>\n2 tsp salt divided<br \/>\n1 1\/2 tsp dried mint<br \/>\n1\/2 tsp cumin<br \/>\n1\/2 tsp black pepper<br \/>\n9 cups water (or enough to cover zucchinis completely)<br \/>\n4-5 potatoes, peeled, cut &amp; washed (optional)<\/p>\n<h2>Method<\/h2>\n<p>Wash the zucchinis and cut off the top stalks and slice off the dried tips at the bottom.<br \/>\nUsing a corer, hollow out the zucchini\u2019s making sure not to poke through them.<br \/>\nIn a bowl, add the ground beef, rice, tomatoes, onions, spices and 1 tsp salt. Mix well.<br \/>\nStuff the zucchinis with the mixture leaving 1\/2\u201d free at the top (filling will expand). Arrange them in a pot with the potatoes &amp; add the water.<br \/>\nBring to a boil on med\/high heat and remove foam that forms on top with a spoon. Lower heat to med\/low, add tomato paste &amp; 1 tsp salt. Cover with lid half way and let them simmer for 30-35 minutes.<br \/>\nTaste the sauce &amp; adjust salt if needed. Add garlic and dried mint. Cook for a few more minutes.
