Preheat the oven to 180C. Line a cake Tin with Grease paper<br \/>\n2. In a bowl whisk together your flour, baking soda and cinnamon<br \/>\n3. In a separate bowl combine together your oil, sugar and vanilla. Whisk together your eggs one by one.<br \/>\n4. Combine the flour mixture in 3 parts to the wet mixture gently stirring. Then add in your walnuts and grated carrots ensuring it\u2019s well distributed.<br \/>\n5. Bake in the oven for 50 minutes at 180C until you\u2019re able to pierce a toothpick and it comes out clean. Let it cool.<br \/>\n6. For the frosting, In a bowl electric whisk your cream cheese, then add in your icing sugar and double cream for 3-4 minutes until it becomes fluffy. Optional: let it chill in the fridge for an hour.<br \/>\n7.
