{"id":7428,"date":"2022-04-16T09:24:00","date_gmt":"2022-04-16T01:24:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=7428"},"modified":"2026-03-09T20:55:32","modified_gmt":"2026-03-09T12:55:32","slug":"minced-chicken-filled-fried-bread-stirwithme","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/minced-chicken-filled-fried-bread-stirwithme","title":{"rendered":"Minced Chicken Filled Fried Bread"},"content":{"rendered":"<h2>Minced Chicken Filled Fried Bread Ingredients<\/h2>\n<p>FILLING<br \/>\n500 gr minced chicken<br \/>\n1 large onion, thinly sliced<br \/>\n8 small shallots, minced<br \/>\n5 garlic cloves, minced<br \/>\n80 gr candied wintermelon, chopped<br \/>\n1 tbsp Cornflour mix with 100 ml water<br \/>\n300 ml water<br \/>\n3 tbsp oil<\/p>\n<h2>Seasoning (Premixed)<\/h2>\n<p>4 tbsp sweet soy sauce<br \/>\n1 1\/2 tbsp oyster sauce<br \/>\n1 1\/2 tbsp soy sauce<br \/>\n1 tsp salt<br \/>\n1 tsp white pepper<br \/>\n1\/2 tsp nutmeg powder<br \/>\n1 tsp chicken stock powder<\/p>\n<h2>Bread<\/h2>\n<p>4 cups strong flour<br \/>\n3\/4 cup APF<br \/>\n1\/2 cup milk powder<br \/>\n5 tbsp sugar<br \/>\n3 tsp instant yeast<br \/>\n4 egg yolks<br \/>\n230-250 ml cold milk<br \/>\n90 gr soften butter<br \/>\n2 tsp Salt<br \/>\nOil for deep fry<\/p>\n<h2>Coating<\/h2>\n<p>3 egg whites<br \/>\n2 1\/2 cups Panko bread crumbs<\/p>\n<h2>Steps<\/h2>\n<p><em><strong>FILLING:<\/strong><\/em><br \/>\n1. Heat oil in a pan, saut\u00e9 onion until caramelized<br \/>\n2. Add minced garlic and shallots, stir<br \/>\n3. Add minced chicken, mix and cook until browned<br \/>\n4. Add winter melon, seasoning ingredients, mix well then add water, cover and simmer for 5 mins over medium to low heat, until water slightly evaporated<br \/>\n5. Add cornflour slurry, mix until thickened. off the heat and set aside<br \/>\n<strong><em>BREAD:<\/em><\/strong><br \/>\n1. In a mixing bowl, add flours, sugar, milk powder, yeast, egg yolks and 100 ml cold milk, mix until everything is combine while adding the remaining milk gradually<br \/>\n2. Add butter and salt and mix\/knead again until well combine and dough is smooth and elastic for 15 mins<br \/>\n3. Cover dough with plastic wrap, let it rise double in size<br \/>\n4. Divide dough, into 22 equal pieces. Weigh 50 gr each, and roll into balls, cover again with plastic wrap, rest for 15-20 mins<br \/>\n5. Take one dough and with a rolling pin flatten the dough into a round shape 15-17 cm in diameter.<br \/>\n6. Place 1-2 tbsp of filling in the center. Then pinch the edges of the dough to close, make sure to close it tight. Do the remaining and cover with kitchen cloth and proof for 15-30 mins until they risen<br \/>\n7. Heat 2-3 inch oil in a shallow pan<br \/>\n8. Dip 4-5 dough into the egg whites, then coat them well with bread crumbs.<br \/>\n9. Transfer into the hot oil, and fry them over low heat until golden brown. Flip only once, drain excess oil onto paper towels.
