{"id":7323,"date":"2022-04-15T08:38:00","date_gmt":"2022-04-15T00:38:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=7323"},"modified":"2026-03-09T20:55:45","modified_gmt":"2026-03-09T12:55:45","slug":"chicken-curry-nachos-stirwithme","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/chicken-curry-nachos-stirwithme","title":{"rendered":"Chicken Curry Nachos"},"content":{"rendered":"<h2>Chicken Curry Nachos Ingredients<\/h2>\n<p>5 tortillas sheets (30 cm)<br \/>\nOil spray<br \/>\nSalt<\/p>\n<h2>Chicken Curry<\/h2>\n<p>500 gr chicken breast fillet<br \/>\n400 gr coconut cream<br \/>\n1\/2 tsp white Pepper<br \/>\n1 1\/2 salt<br \/>\n1 1\/2 tbsp white sugar<br \/>\n2 tbsp oil<\/p>\n<h2>Dry Spices<\/h2>\n<p>5 Kaffir lime leaves<br \/>\n2 bay leaves<br \/>\n2 lemongrass, crushed<br \/>\n1 turmeric leaf<br \/>\n1 dried yellow mangosteen<br \/>\n2 cloves<br \/>\n1\/2 stalk cinnamon<\/p>\n<h2>Paste Spices<\/h2>\n<p>10 small shallots<br \/>\n5 garlic cloves<br \/>\n10 long chili<br \/>\n2 candlenut<br \/>\n1\/4 tsp cumin, dry toast<br \/>\n1\/2 tsp coriander, dry toast<br \/>\n1 thumb sized ginger<br \/>\n8 cm turmeric<br \/>\nA thumb size galangal<br \/>\n1\/2 nutmeg<br \/>\n3 tbsp water<\/p>\n<h2>Toppings<\/h2>\n<p>1\/3 cup corn kernel<br \/>\n150 gr mozzarella cheese, shredded<br \/>\n150 gr sharp cheddar cheese, shredded<br \/>\n1 small red onion, thinly wedges<br \/>\n2 tomato, cut into cubes<br \/>\n3 long chilies, chopped<br \/>\n2 green chilies, chopped<br \/>\n1\/4 cup green chili sambal (optional)<br \/>\n1 scallion, sliced<br \/>\n1\/3 cup Cilantro leaves<br \/>\nSIDES : Lime<\/p>\n<h2>Steps<\/h2>\n<p><strong><em>Chips:<\/em><\/strong><br \/>\nPreheat oven to 180C\/370 F<br \/>\nSpray oil onto both sides of the tortillas sheets, then cut into triangles. Line them on a baking tray over parchment paper, sprinkle some salt on top then pop into the oven for 8- 10 mins until crispy and slightly golden. Let it cool then store in a container. Set aside<br \/>\n<em><strong>Chicken curry:<\/strong><\/em><br \/>\nAdd spices paste ingredients into a food processor, blend them until very smooth and pasty<br \/>\nHeat oil in a pan, over high heat, saut\u00e9 blended mixture for 3 mins then add the dry spices stir for another 2-3 mins until cooked<br \/>\nNext add coconut cream, stir and let it simmer over low heat, add chicken in along with salt, pepper and sugar. Let it simmer and cook for 20 mins with lid on. Uncover and adjust salt and sugar. sauce should be creamy and slightly thick, if not let it cook uncover until you get the right consistency. Transfer into a bowl. Shred chicken with a fork and set a side<br \/>\nPreheat oven to 200 C\/400 F, lay a parchment on a baking sheet and spray some oil, place chips for the first layer followed by corn, curry chicken mixture, cheeses, red onion, tomatoes, chilies, green chili sambal (if using)<br \/>\nPop into the oven and bake for 10 mins.
