Sprinkle with salt.<br \/>\nIn a shallow bowl, beat 2 eggs, 2 tbsp water &amp; sprinkle w salt n pepper.<br \/>\n\u2022in another plate combine the bread crumbs, Italian seasoning &amp; garlic powder. Add the flour in another plate.<br \/>\n\u2022Dip the eggplant slice in the flour, then it into the egg &amp; then into the breadcrumbs.<br \/>\n\u2022Spray the eggplant with oil &amp; then place them in the airfryer at 180\u2070C &amp; air fry for 12-15 mins or until golden crispy flipping halfway through. Work in batches.<br \/>\n\u2022Make an eggplant macro bowl or serve it as a side.
