Add in all your veggies except the corn and let cook for a few minutes.<br \/>\nScoop your veggie mix to the side and add minced beef, all the seasoning and balsamic vinegar.<br \/>\nOnce beef is cooked through, stir in the corn, tomatoes and the tomato paste.<br \/>\nMix well and let simmer for a few minutes. In the meantime, slice the potatoes into thin discs.<br \/>\nIn an oven dish, pour the veggie and meat mixture, top with the potatoes.<br \/>\nMake sure they overlap but not entirely.<br \/>\nBrush the potatoes with olive oil and sprinkle S&amp;P.<br \/>\nPlace in a preheated oven on 200 degrees for 30 min or until the potatoes are golden and crispy.<br \/>\nLet cool for a few minutes before serving.
