{"id":5924,"date":"2022-04-10T13:17:00","date_gmt":"2022-04-10T05:17:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=5924"},"modified":"2026-03-09T20:56:49","modified_gmt":"2026-03-09T12:56:49","slug":"taco-soup-sarahsteffens_personalchef","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/taco-soup-sarahsteffens_personalchef","title":{"rendered":"Taco Soup"},"content":{"rendered":"<h2>Taco Soup Ingredients<\/h2>\n<p>1 tablespoon avocado oil<br \/>\n1 medium yellow onion, peeled &amp; diced<br \/>\n3 garlic cloves, peeled &amp; minced<br \/>\n2 teaspoons sea salt<br \/>\n1 teaspoon black pepper<br \/>\n1 tablespoon chili powder<br \/>\n1 pound of grass-fed ground beef<br \/>\n2 cups rotel tomatoes, drained<br \/>\n1 14.5-ounce can of coconut cr\u00e8me<br \/>\n1 cup beef or chicken stock<br \/>\n1 medium avocado, peeled &amp; diced<br \/>\n2 tablespoons fresh lime juice<br \/>\n\u00bc cup fresh cilantro, chopped<\/p>\n<h2>Directions<\/h2>\n<p>Add avocado oil to a large stock pot or Dutch oven and bring to medium-low heat.<br \/>\nAdd diced onion and minced garlic and season with sea salt, black pepper and chili powder and stir well to combine.<br \/>\nSaut\u00e9 until onions are soft, about 5 minutes.<br \/>\nAdd in ground beef and break up with a wooden spoon. Continue to saut\u00e9 until the beef has browned, about 15 minutes.<br \/>\nStir in tomatoes, coconut cr\u00e8me and beef or chicken stock and reduce heat to a simmer until the soup is thick and bubbly, about 15 minutes.<br \/>\nTurn off the heat and stir in the diced avocado, fresh lime juice and cilantro.<br \/>\nServe between 4 with additional cilantro, if preferred, and store any leftovers in the fridge for up to 3 days.
