In a separate bowl, whisk eggs, greek yogurt, cheese, herbs and seasoning until everything is combined.<br \/>\nButter a baking dish or individual gratin dishes and spoon the chopped veggies in each so they form one layer.<br \/>\nUsing a ladle, pour some of the egg mix over the veggies in each gratin dish (or just pour them in the big baking dish if using).<br \/>\nTop them with chopped asparagus and sprinkle some more cheese. Bake in a preheated oven on 200C for 20-25 min or until the eggs are fully cooked.<br \/>\nYou will notice the eggs will rise, but they will go back down a few minutes after you remove from the heat.
