Add water if needed just to barely cover the zucchini.<br \/>\nBring to a boil and let simmer covered around 15 minutes or until the zucchini chunks are soft.<br \/>\nSeason with salt, pepper, dried herbs and add the basil leaves.<br \/>\nBlend with an immersion blender or in a food processor. Taste and adjust seasoning.<br \/>\nServe warm with a squeeze of lemon and some yogurt or feta, or chill in the fridge for a couple of hours and serve cold.
