Put the chicken wings into water and bring to boil. Drain and dry them. Marinate the chicken wings with dark soy sauce, light soy sauce, sugar, salt, pepper and yellow wine for 15 mins.<br \/>\n2. Cut potatoes and carrot into bite size. Set aside.<br \/>\n3. Pan fry chicken wings over medium-high heat until golden brown. Take the chicken wings up and set side.<br \/>\n4. Use the same pan, add some oil over medium-high heat. Add shallot and ginger, stir-fry for 30 seconds. Add potatoes and carrots, keep frying until a bit golden, add water and cover the lid until potatoes and carrot become soften.<br \/>\n5. Add the chicken wings back and all the sauce. Mix well and close the lid for 10 mins.<br \/>\n6. Open the lid and put the heat to high until the sauce becomes thicker.
