{"id":5290,"date":"2022-04-01T07:10:00","date_gmt":"2022-03-31T23:10:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=5290"},"modified":"2026-03-09T20:58:43","modified_gmt":"2026-03-09T12:58:43","slug":"eggplant-parmigiana-kristelskitchenblog","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/eggplant-parmigiana-kristelskitchenblog","title":{"rendered":"Eggplant Parmigiana"},"content":{"rendered":"<h2>Eggplant Parmigiana Ingredients<\/h2>\n<p>1 eggplant sliced lengthwise<br \/>\n400g pureed tomato sauce<br \/>\n1 cup fresh basil<br \/>\n1 small onion chopped<br \/>\n2 tbsp olive oil<br \/>\n1 1\/2 cup shredded mozzarella<br \/>\n1\/2 cup grated parmesan<br \/>\n6 slices of fresh mozzarella<br \/>\n1 tbsp dried oregano<br \/>\nSalt and pepper to taste<\/p>\n<h2>Steps<\/h2>\n<p>Start by adding olive oil, salt and pepper to the eggplant slices.<br \/>\nBake them in the oven on 200C for 15 minutes.<br \/>\nMeanwhile, cook the onions with 1 tbsp of olive oil, then add tomato sauce and 1 cup of water.<br \/>\nSeason with salt, pepper, dried oregano and basil.<br \/>\nBring to a boil and simmer for 10 minutes. Once done, begin layering on a baking dish:<br \/>\nLayer 1- tomato sauce<br \/>\nLayer 2- grilled eggplants<br \/>\nLayer 3- cheese<br \/>\nRepeat once more, and finish with a final layer of tomato sauce, topped with fresh mozzarella slices.<br \/>\nCover and bake 15 minutes on 200C, then uncover and bake until the cheese turns golden and bubbly.
