{"id":5168,"date":"2022-03-30T11:40:00","date_gmt":"2022-03-30T03:40:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=5168"},"modified":"2026-03-09T20:59:02","modified_gmt":"2026-03-09T12:59:02","slug":"rainbow-vegetable-soup-sarahsteffens_personalchef","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/rainbow-vegetable-soup-sarahsteffens_personalchef","title":{"rendered":"Rainbow Vegetable Soup"},"content":{"rendered":"<h2>Ingredients For Rainbow Vegetable Soup<\/h2>\n<p>1 tablespoon avocado oil<br \/>\n1 medium yellow onion, peeled &amp; diced<br \/>\n2 stalks celery, diced<br \/>\n1 medium leek, thinly sliced<br \/>\n1 medium fennel bulb, chopped<br \/>\n3 rainbow carrots, diced<br \/>\n1 medium red bell pepper, seeded &amp; chopped<br \/>\n3 garlic cloves, peeled &amp; minced<br \/>\n2 teaspoons sea salt<br \/>\n1 teaspoon black pepper<br \/>\n1 tablespoon dried oregano<br \/>\n1 medium zucchini, ends removed &amp; diced<br \/>\n1 cup veggie stock<br \/>\n1 14.5-ounce can petite diced tomatoes<br \/>\n1 bay leaf<br \/>\n2 cups baby spinach<br \/>\nGarnish:<br \/>\nFresh parsley<\/p>\n<h2>Instructions<\/h2>\n<p>Add avocado oil to a large stock pot or Dutch oven and bring to medium-low heat.<br \/>\nAdd onion, celery, leek, fennel, carrot, bell pepper and garlic and season with sea salt, black pepper and dried oregano and stir well to combine.<br \/>\nSaut\u00e9 until veggies are soft, about 5 minutes.<br \/>\nAdd in zucchini. Continue to saut\u00e9 until the zucchini has softened, about 5 minutes.<br \/>\nAdd in veggie stock, diced tomatoes and bay leaf and reduce heat to a simmer until the soup is thick and bubbly, about 15 minutes.<br \/>\nTurn off the heat and stir in the baby spinach.<br \/>\nServe between 6, garnishing with fresh parsley and store any leftovers in the fridge for up to 5 days.
