{"id":5127,"date":"2022-03-30T07:10:00","date_gmt":"2022-03-29T23:10:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=5127"},"modified":"2026-03-09T20:59:11","modified_gmt":"2026-03-09T12:59:11","slug":"tepsi-kumpir-tray-baked-potatoes-wondernonieskitchen","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/tepsi-kumpir-tray-baked-potatoes-wondernonieskitchen","title":{"rendered":"Tepsi Kumpir (Tray &#8216;Baked&#8217; Potatoes)"},"content":{"rendered":"<h2>Ingredients Tepsi Kumpir<\/h2>\n<p>1 kg potatoes (washed, peeled, cubed then boiled till tender)<br \/>\n2 cups milk of choice<br \/>\n1 tsp salt (to taste)<br \/>\n1\/2 tsp ground black pepper<br \/>\n2 cups grated ka\u015far or mozzarella<br \/>\n4 tbsp butter<\/p>\n<h2>Steps To Make<\/h2>\n<p>Drain boiled potatoes, add back into pot with milk, salt &amp; pepper.<br \/>\nMash the potatoes till smooth, add butter &amp; cheese, mix well till stringy &amp; set aside (keep warm)<\/p>\n<h2>Yoghurt Coleslaw<\/h2>\n<p>2 cups cabbage (thinly sliced)<br \/>\n1\/2 cup carrot (julienned)<br \/>\n1 tbsp spring onion (white part only, thinly chopped)<br \/>\n1 cup yoghurt<br \/>\n1\/2 tsp salt<br \/>\n1\/4 tsp ground black pepper<\/p>\n<h2>Steps To Make Coleslaw<\/h2>\n<p>Combine All Ingredients, Taste To Adjust Seasoning &amp; Set Aside.<\/p>\n<h2>Garlic &amp;Amp; Thyme Mushroom<\/h2>\n<p>1 tbsp olive oil<br \/>\n2 cups fresh mushroom of choice (sliced)<br \/>\n2 cloves garlic (minced)<br \/>\n1\/2 tsp dried thyme<br \/>\n1\/4 tsp salt (to taste)<br \/>\n1\/8 tsp ground black pepper<\/p>\n<h2>Steps To Make Garlic &amp;Amp; Thyme Mushroom<\/h2>\n<p>Heat a pan on medium high, add oil &amp; mushrooms.<br \/>\nCook till mushrooms are browned (abt 8 mins) add garlic, thyme, salt &amp; pepper.<br \/>\nTaste for seasoning &amp; set aside.<\/p>\n<h2>Cumin Purple Carrot<\/h2>\n<p>2 cups purple carrot or cabbage (chopped or thinly sliced respectively)<br \/>\n1 tsp olive oil<br \/>\n1 tsp cumin seeds<br \/>\n1\/2 tsp salt (to taste)<br \/>\n1\/4 tsp ground black pepper<br \/>\n1 tbsp yoghurt<\/p>\n<h2>Steps To Make<\/h2>\n<p>Heat a pan on medium high, add oil.<br \/>\nAdd cumin seeds, cook for 1 min &amp; add carrot or cabbage.<br \/>\nCook for 8 mins, add salt &amp; pepper, cook till tender.<br \/>\nRemove from heat, set aside to cool completely &amp; add yoghurt.<br \/>\nTaste for seasoning &amp; set aside.<\/p>\n<h2>Finishing<\/h2>\n<p>To Assemble, Transfer Warm Mashed Potato Mixture To Base Of A Heatproof Baking Tray.<br \/>\nArrange The Toppings (I Also Added Steamed Corn Kernels &amp;Amp; Peas, Sliced Pickled Jalapeno &amp;Amp; 2 Types Of Olives), Drizzle With Mayo &amp;Amp; Sriracha (Or Ketchup) &amp;Amp; Sprinkle More Grated Cheese (Optional).<br \/>\nTo make the k\u0131s\u0131r salad, mix 1 cup of fine bulgur with 1 tbsp tomato paste, 1\/2 tsp salt &amp; 1\/2 tsp chilli flakes.<br \/>\nMix well then add 3\/4 cup of hot water.
