{"id":5017,"date":"2022-03-27T16:07:00","date_gmt":"2022-03-27T08:07:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=5017"},"modified":"2026-03-09T20:59:27","modified_gmt":"2026-03-09T12:59:27","slug":"creamy-tortellini-soup-kristelskitchenblog","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/creamy-tortellini-soup-kristelskitchenblog","title":{"rendered":"Creamy Tortellini Soup"},"content":{"rendered":"<h2>Ingredients (3-4 Servings)<\/h2>\n<p>1 tbsp olive oil<br \/>\n1\/2 an onion chopped (or 1 small)<br \/>\n2 small garlic cloves minced<br \/>\n1 tsp dried oregano<br \/>\n1 tbsp all purpose flour<br \/>\n1 1\/2 cups chicken or vegetable broth<br \/>\n1 can diced tomatoes (400g)<br \/>\nSalt &amp; pepper to taste<br \/>\n2 cups tortellini<br \/>\n1 tbsp heavy cream (or more if you like)<br \/>\n1-2 cups fresh spinach (I used only 1 cup, but you can definitely add up to 2 cups)<br \/>\nShredded parmesan for garnish<\/p>\n<h2>Steps<\/h2>\n<p>Heat 1 tbsp of olive oil in a big pot on medium heat and cook the onions until slightly browned.<br \/>\nAdd the oregano and garlic and cook for another minute until fragrant.<br \/>\nSprinkle 1 tbsp of flour and mix for around 30 seconds.<br \/>\nAdd the broth, diced tomatoes, salt and pepper, bring to a boil and simmer for 10 minutes.<br \/>\nOnce done, remove from heat and blend until smooth with a hand blender (or a regular blender).<br \/>\nReturn to the stove and add the cream, stirring until it\u2019s entirely blended in.<br \/>\nAdd the tortellini and cook for a few minutes (or as instructed on the packaging).<br \/>\nAdd the spinach and cook for a few more minutes until they\u2019re wilted.<br \/>\nServe warm with lots of shredded parmesan and a side of bread to soak in all the soup yummines.
