Meanwhile, cook the pasta in salted and boiling water.<br \/>\nWhile the pasta cooks, mix the dressing ingredients in a bowl, whisking for a minute until well combined.<br \/>\nDrain the cooked pasta from all the water and place them in a big bowl.<br \/>\nToss immediately with the dressing while still warm.<br \/>\nLet cool then mix in all the salad ingredients including the cooked eggplants.<br \/>\nAdd more crumbled feta on top and serve warm or chilled.
