{"id":4787,"date":"2022-03-23T10:49:00","date_gmt":"2022-03-23T02:49:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=4787"},"modified":"2026-03-09T21:00:13","modified_gmt":"2026-03-09T13:00:13","slug":"crab-pao-fan-teochew-submerged-rice-with-crab-wondernonieskitchen","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/crab-pao-fan-teochew-submerged-rice-with-crab-wondernonieskitchen","title":{"rendered":"Crab Pao Fan (Teochew Submerged Rice With Crab)"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p>4 cups cooked leftover rice<br \/>\n500 g seafood of choice (crabs, prawns, scallops, lobster, fish, etc)<\/p>\n<h2>Broth<\/h2>\n<p>1 tsp vegetable oil<br \/>\n1 tsp sesame oil<br \/>\n500 g prawn heads &amp; shells (optional)<br \/>\n5 cloves garlic (minced)<br \/>\n2 inch ginger (julienned)<br \/>\n8 cups chicken stock<br \/>\n1 tbsp mushroom powder seasoning or fish bouillon cube<br \/>\n1 tsp fish sauce<br \/>\n1 tsp salt (to taste)<br \/>\n1\/2 tsp ground white pepper (to taste)<\/p>\n<h2>Vegetables<\/h2>\n<p>1 medium carrot (diced)<br \/>\n1 celery (diced)<br \/>\n1 cup corn kernels (fresh or frozen)<br \/>\n2 tbsp Goji berry<br \/>\n2 tbsp scallion (chopped)<\/p>\n<h2>Crispy Rice<\/h2>\n<p>1\/2 cup\u00a0cooked rice<br \/>\noil for frying<\/p>\n<h2>Crispy Eggs<\/h2>\n<p>3\u00a0large\u00a0eggs<br \/>\n1\/4 tsp\u00a0salt<br \/>\n1\/8\u00a0tsp\u00a0ground white pepper<\/p>\n<h2>Steps<\/h2>\n<p>To make broth, add both oils into a large pot on medium high heat.<br \/>\nWhen hot, add prawn shells (if using), fry till they change colour, remove then add garlic &amp; ginger.<br \/>\nFry for 2 mins, add chicken stock, seasoning or bouillon &amp; bring to a boil.<br \/>\nLower heat to a simmer, add seafood, carrot &amp; celery, cook for 10 mins until seafood is half cooked.<br \/>\nAdd corn, Goji berry, fish sauce, salt &amp; pepper, cook until seafood is fully cooked &amp; vegetables are tender.<br \/>\nTaste to adjust seasoning &amp; set aside.<br \/>\nFor crispy rice, scatter chilled rice into pan with very hot oil over high heat (rice should float, puff up &amp; clump together), cook golden brown &amp; crispy &amp; transfer onto kitchen towel to drain excess oil.<br \/>\nBeat eggs, salt &amp; pepper until foamy, pour eggs through a strainer into the oil used earlier, fry, separate into chunks &amp; transfer onto kitchen towel.<br \/>\nTo assemble, add enough rice into a serving plate or bowl, ladle enough soup, seafood &amp; vegetables, sprinkle with crispy rice &amp; rice, garnish with chopped scallions &amp; serve with sliced chillies in soy sauce (optional).
