{"id":4417,"date":"2022-03-17T08:57:00","date_gmt":"2022-03-17T00:57:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=4417"},"modified":"2026-03-09T21:01:29","modified_gmt":"2026-03-09T13:01:29","slug":"roasted-cauliflower-garlic-soup-wondernonieskitchen","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/roasted-cauliflower-garlic-soup-wondernonieskitchen","title":{"rendered":"Roasted Cauliflower &amp; Garlic Soup"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p>5 cups cauliflower florets (abt 550 g)<br \/>\n3 tbsp olive oil (divided)<br \/>\n1 cup yellow onion (diced)<br \/>\n1 head garlic (top removed to expose cloves)<br \/>\n2 tbsp butter<br \/>\n1 bay leaf<br \/>\n2 tsp fresh thyme leaves (or 1 tsp dried thyme)<br \/>\n4 cups chicken or vegetable broth<br \/>\n1\/2 cup cooking or heavy cream<br \/>\n1 tsp salt (to taste, divided)<br \/>\n1\/2 tsp ground black pepper (to taste, divided)<br \/>\n2 tsp white truffle oil (divided)<\/p>\n<h2>Steps<\/h2>\n<p>Preheat oven to 180 deg C.<br \/>\nPlace garlic on a piece of foil, drizzle 1 tbsp of oil, add salt &amp; pepper &amp; cover entirely.<br \/>\nPlace cauliflower florets on a lined baking sheet, drizzle remaining olive oil, sprinkle some salt &amp; pepper.<br \/>\nToss to coat, spread them out on baking sheet, place garlic on same sheet &amp; roast for abt 45 mins or until golden brown.<br \/>\nMelt butter in a large pot over medium high heat, add onions &amp; cook until translucent, abt 5 mins.<br \/>\nAdd thyme &amp; bay leaf, stir for 1 min then add broth.
