Wash and cut eggplant into bite size, soak in water with white vinegar. Marinate minced meat with light soy, sugar, pepper and oil for 20 mins. Set aside.<br \/>\n2. Add 2-3 tablespoon oil into the pan, fry eggplants until a bit soften.<br \/>\n3. Fry minced meat over medium high heat until cooked. Push the meat on the side of the pan, add garlic, ginger, scallion in the middle of the pan and fry for 30 seconds. Add all the sauce and fry for 30 seconds. Mix well everything.<br \/>\n4. Add back the eggplant and mix well, keep frying until eggplant is soften.
