{"id":3806,"date":"2022-03-13T10:50:00","date_gmt":"2022-03-13T02:50:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=3806"},"modified":"2026-03-09T21:02:05","modified_gmt":"2026-03-09T13:02:05","slug":"carrot-cupcakes-with-vanilla-frosting-bypaigeashlie","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/carrot-cupcakes-with-vanilla-frosting-bypaigeashlie","title":{"rendered":"Carrot Cupcakes With Vanilla Frosting"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p>2 large carrots, shredded (approx. 1 cup)<br \/>\n3 eggs, room temperature<br \/>\n1 1\/2 cups whole wheat or @bobsredmill 1-1 gluten free flour<br \/>\n1 1\/2 tsp baking powder<br \/>\n1\/2 tsp baking soda<br \/>\n1 1\/2 tsp cinnamon<br \/>\n1\/2 tsp salt<br \/>\n1\/2 cup puremaple syrup or honey<br \/>\n1\/4 cup nut milk<br \/>\n1\/2 cup @enjoyyoso plain, vanilla or greek yogurt<br \/>\n1\/4 cup chopped crystallized ginger *optional, but highly recommend for an extra kick<br \/>\n@simplemills vanilla frosting<\/p>\n<h2>Steps<\/h2>\n<p>Preheat oven to 350.<br \/>\nI\u2019m a mixing bowl add the eggs and beat until fluffy.<br \/>\nAdd in the remaining wet ingredients and mix until smooth.<br \/>\nAdd the shredded carrots, ginger and dry ingredients into the bowl (I use my food processor to shred\/chop the carrots and ginger).<br \/>\nOnce combined, scoop mixture into a greaser muffin tin (yields 12).<br \/>\nBake for 18-20 minutes, until an inserted tooth puck comes out clean.<br \/>\nOnce the muffins have completely cooled, add as much icing as you\u2019d like! The muffins will keep for a few days in an airtight container but obviously are best enjoyed ASAP!
