Remove from heat, drain and let cool 10 minutes. Toss them with:<br \/>\n1\/2 tsp paprika<br \/>\n1\/4 tsp black pepper<br \/>\n1\/4 tsp salt<br \/>\n2 tbsp olive oil<\/p>\n<h2>Steps<\/h2>\n<p>Mix lightly until the potatoes are covered from all sides.<br \/>\nPlace them on a baking tray and smash each potato with the bottom of a cup or bowl. Bake them in a preheated oven on 200 degrees for 45 minutes.<br \/>\nRemove and brush them with a mix of:<br \/>\n&#8211;<em>Olive oil<\/em><br \/>\n<em>-Chopped parsley or cilantro<\/em><br \/>\n<em>-Minced garlic<\/em><br \/>\n<em>-Lemon juice<\/em><br \/>\n-A sprinkle of ground cayenne (add to taste)<br \/>\nBake them for 10 more minutes or until the potato skins turn crispy and crunchy.<br \/>\nGarnish with chopped parsley and lemon zest and serve them with a dipping sauce of your choice.
