Place eggs in medium pan of water in one layer. Make sure water covers them by an inch. Cover, bring to a simmer, remove lid. Simmer 9 minutes. Drain and dump eggs into a bowl filled with water and ice to cool for 15 minutes to 1 hour.<br \/>\n2. Peel.<br \/>\n3. Slice in half vertically.<br \/>\n4. Hollow out whites and place all the yolks in a small bowl. Mix the yolks with the truffle oil, mayo, Dijon, salt and pepper.<br \/>\n5. Mash together well. I prefer a hand held mixer to cream together well with no lumps. It pipes easier.<br \/>\n6. Place egg mixture in a piping bag with decorative tip or in a large baggie with small part at corner cut off. Fill with egg mixture, pipe into halves. Top with a large peace of shaved Parmesan and a slice of Truffle. Refrigerate for at least 1 hour.
