{"id":28125,"date":"2025-08-07T16:01:00","date_gmt":"2025-08-07T08:01:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=28125"},"modified":"2026-03-09T20:21:26","modified_gmt":"2026-03-09T12:21:26","slug":"pempek-saus-cuko-wondernonieskitchen","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/pempek-saus-cuko-wondernonieskitchen","title":{"rendered":"Pempek &amp; Saus Cuko"},"content":{"rendered":"<h2>Ingredients Cooked Dough<\/h2>\n<p>1 tbsp garlic paste (or 7 cloves)<br \/>\n1 tsp ginger paste (or 2 cm piece)<br \/>\n4 tbsp fresh boneless &amp; skinless fresh lean fish of your choice (I rehydrated dried anchovies &amp; blended them with water)<br \/>\n3 tbsp neutral oil of choice<br \/>\n1 tbsp sugar<br \/>\n1 tbsp fish bouillon<br \/>\n1 tsp garlic powder<br \/>\n1 tsp onion powder<br \/>\n1 tsp salt<br \/>\n1\/2 tsp ground white pepper<br \/>\n250 g AP flour<br \/>\n600 ml cold water<\/p>\n<h2>Method<\/h2>\n<p>1. Blend garlic, ginger &amp; fish into a smooth paste.<br \/>\n2. Add all ingredients into a large pan &amp; cook on a low flame (stirring continuously with a spatula)<br \/>\n3. After 5-7 mins, the dough will start to clump, continue cooking until it forms 1 big lump &amp; can be shaped easily.<\/p>\n<h2>Ingredients Dough Additions<\/h2>\n<p>2 eggs (lightly beaten)<br \/>\n3 tbsp onion (sliced)<br \/>\n3 tbsp scallion (chopped, I used parsley)<br \/>\n1\/2 cup coconut cream<br \/>\n500 g tapioca flour<br \/>\n400-600 ml warm water<\/p>\n<h2>Method<\/h2>\n<p>1. When cooked dough has cooled down, transfer to a large dish, add the rest of the ingredients, except water.<br \/>\n2. Pour in water little by little until it reaches a pasty consistency (I used around 450 ml) &amp; set aside.<br \/>\n3. Bring a large pot of water to a boil &amp; add 1 tbsp of neutral oil.<br \/>\n4. Boil shaped dough for 10 mins, drain on kitchen towels to remove excess water &amp; allow them to cool for 15 mins before deep frying in batches till they reach a golden brown colour.<br \/>\n5. Serve with sauce of choice.<\/p>\n<h2>Sauce<\/h2>\n<p>300 g of palm sugar<br \/>\n500 ml of water<br \/>\n5-7 cloves garlic<br \/>\n15-20 birds eye chillies<br \/>\n1 tsp salt<br \/>\n2 tbsp vinegar or tamarind paste<\/p>\n<h2>Method<\/h2>\n<p>1. heat 300 g of palm sugar with 500 ml of water, heat on low flame till it&#8217;s fully dissolved.<br \/>\n2. Strain to remove impurities.<br \/>\n3. Blend 5-7 cloves garlic with 15-20 birds eye chillies (depending on spice tolerance).<br \/>\n4. Add blended garlic chilli paste into palm sugar mixture.<br \/>\n5. Add 1 tsp salt, 2 tbsp vinegar or tamarind paste.<br \/>\n6.
