To make the dough, add flour &amp; water into a stand mixer with a dough hook.<br \/>\n2. Knead for 8 mins on low speed until a smooth dough forms.<br \/>\n3. Rub oil all over the dough to form a thin coating &amp; cut it into 10 equal pieces.<br \/>\n4. Cover with plastic wrap &amp; leave to rest for 30 mins.<\/p>\n<h2>Ingredients Paste<\/h2>\n<p>3 tbsp AP flour<br \/>\n1\/4 tsp salt<br \/>\n5 tbsp oil<\/p>\n<h2>Method<\/h2>\n<p>1. Add flour &amp; salt into a bowl.<br \/>\n2. Heat oil in a pan until it smokes, then pour into bowl.<br \/>\n3. Stir well to remove any lumps.<\/p>\n<h2>Filling<\/h2>\n<p>300 g minced meat or other protein of choice<br \/>\n3 tbsp water<br \/>\n1 tbsp rice vinegar<br \/>\n1 tsp salt<br \/>\n1\/4 tsp ground white pepper<br \/>\n1 tsp Chinese 5 spice<br \/>\n3 tbsp scallions (chopped)<\/p>\n<h2>Method<\/h2>\n<p>1. Combine mince, water, vinegar, salt &amp; white pepper into a bowl.<br \/>\n2. Swirl with chopsticks in the same direction until the liquid is fully absorbed &amp; it becomes sticky.<br \/>\n3. Divide the filling into 10 portions.<br \/>\n4. To assemble, flatten a piece of dough into a tennis racket shape, brush a layer of the flour &amp; oil paste, then sprinkle with Chinese 5 spice powder.<br \/>\n5. Place one portion of the meat in the middle of the racket head end of the dough &amp; top with chopped scallions.<br \/>\n6. Wrap the meat with the outer part of the dough, roll the stuffed dough towards the handle part of the racket while stretching it as thin as possible.<br \/>\n7. Stand it on one end, press it down until it turns into a disc about 1\/2 inch thick.<br \/>\n8. Heat oil in a pan over medium hight, place the flatbreads &amp; let it cook for 1 min.<br \/>\n9. Turn over once the undersiide turns golden, when both sides are golden &amp; crispy, transfer onto a plate lined with kitchen paper to absorb excess oil.<br \/>\n10.
