{"id":28023,"date":"2025-07-29T11:28:00","date_gmt":"2025-07-29T03:28:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=28023"},"modified":"2026-03-09T20:21:40","modified_gmt":"2026-03-09T12:21:40","slug":"pistachio-shortbread-cookies-the_kitchen_girl","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/pistachio-shortbread-cookies-the_kitchen_girl","title":{"rendered":"Pistachio Shortbread Cookies"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p>200g Soft salted butter<br \/>\n100g Sugar<br \/>\n120g Pistachios (shelled and coursely chopped)<br \/>\n200g All purpose flour<br \/>\n50g Corn starch<br \/>\n150g Dark chocolate<\/p>\n<h2>Intructions<\/h2>\n<p>Mix the butter and sugar until combined.<br \/>\nAdd the flour, corn starch and 2\/3 of the pistachios. Keep the rest 1\/3 of the pistachios to decorate the top.<br \/>\nMix to form a breadcrumbs consistency.<br \/>\nNow use your hand to make a soft non sticky dough.<br \/>\nDivide the dough into 2 portions.<br \/>\nPlace onto cling wrap and roll into a log, 4cm thick.<br \/>\nRefrigerate the 2 logs until firm enough to cut properly.<br \/>\nSlice into 1\/2 inch thick slices.<br \/>\nPlace on a baking tray lined with baking paper.<br \/>\nKeep atleast 2cm space between each cookie and they do expand while baking.<br \/>\nBake in a preheated oven 170c for about 15minutes or until you just begin to see the edges go very lightly golden.<br \/>\nDo not over bake these cookies.<br \/>\nOnce baked, Allow to cool completely.<br \/>\nMelt the chocolate and dunk the cookies into the chocolate half way up.<br \/>\nPlace on a parchment paper and sprinkle the rest of the pistachios on top to decorate.<br \/>\nAllow for the Chocolate to set completely.<br \/>\nEnjoy.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Ingredients 200g Soft salted butter 100g Sugar 120g Pistachios (shelled and coursely chopped) 200g All purpose flour 50g Corn starch 150g Dark chocolate Intructions Mix the butter and sugar until combined.
