For the garam masala mix, roast together cumin, coriander, cardamom pods, black peppercorn, cloves, nutmeg, dried red chilli until the flavours release and are aromatic. Place in a spice grinder and blitz till grounded<br \/>\n2. You can use any carrots but I used the trio coloured carrots from Waitrose. Peel and slice them halves\/quarters<br \/>\n3. For the marinade add a generous amount of oil, enough to coat all the carrots. Combine that with garlic, honey, salt, pepper, rosemary and garam masala<br \/>\n4. Coat the carrots with the marinade ensuring it\u2019s all covered. Place in the oven to roast at 180C for 20 minutes.
