{"id":27716,"date":"2025-01-27T16:58:00","date_gmt":"2025-01-27T08:58:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=27716"},"modified":"2026-03-09T20:21:58","modified_gmt":"2026-03-09T12:21:58","slug":"vegetable-samosas-cooksbyson","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/vegetable-samosas-cooksbyson","title":{"rendered":"Vegetable Samosas"},"content":{"rendered":"<h2>Ingredients For The Pastry;<\/h2>\n<p>250g Chakki Gold Flour<br \/>\n1 Tsp Salt<br \/>\n1 Tsp Jeera Powder<br \/>\n1 Tbsp Vegetable Oil<br \/>\n2 Tbsp Lemon Juice<br \/>\nBoiling Water (approx 3\/4 of a standard mug)<br \/>\nPaste (2 Tbsp Flour and Water)<\/p>\n<h2>For The Filling;<\/h2>\n<p>1 large Carrot<br \/>\n2 Medium Sized Potatoes<br \/>\n1\/2 White Onion<br \/>\nSmall bowl of Garden Peas<br \/>\nSmall bowl of Sweetcorn<br \/>\nSmall bowl of White Cabbage<br \/>\nJuice of 1 Lemon<br \/>\nA handful of Fresh Coriander<br \/>\n3 Tbsp Vegetable Oil<br \/>\n1\/2 Tsp Whole Jeera Seeds<br \/>\n1\/2 Tsp Black Mustard Seeds<br \/>\n1 Tsp Chilli Powder<br \/>\n1\/2 Tsp Tumeric Powder<br \/>\n1 Tsp (heaped) Dhana\/Jeera Powder<br \/>\n1 Tsp (heaped) minced mixture of Garlic, Ginger, Green Chilli<br \/>\n1\/2 Tsp Sugar<br \/>\nExtra Vegetable Oil for frying<\/p>\n<h2>Method<\/h2>\n<p>1. To make the samosa pastry, mix together all the dry ingredients above and gradually add in the boiling water mixing continuously with a spoon. Once the dough is cool enough, knead with your hands until the dough is combined. Taking a small handful at a time, with a rolling pin roll out into circles and cook each side on tawa for 10 secs (like rotli) and cut into half into semi circles. Cover with a wet tissue and set aside.<br \/>\n2. To prepare the filling, heat the oil in a pan and fry the jeera and mustard seeds until they start to pop. Mix in the vegetables which should be chopped into small cubes. At this point do not add the coriander and cabbage! Let the vegetables soften and add in the ground spices and masala and fry for a further 10-15mins. Turn the gas off, drain any excess oil and mix in the coriander and cabbage.<br \/>\n3. Fold each pastry into a triangular shape and fill with 1 1\/2 Tsp of the vegetable filling. Bind the edges with the paste to ensure no filling will fall out.<br \/>\n4. Heat a generous amount of oil in a deep set pan and fry the samosas a few at a time.
