{"id":27680,"date":"2025-01-22T12:10:00","date_gmt":"2025-01-22T04:10:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=27680"},"modified":"2026-03-09T20:22:04","modified_gmt":"2026-03-09T12:22:04","slug":"thai-red-prawn-curry-normasfooddiary","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/thai-red-prawn-curry-normasfooddiary","title":{"rendered":"Thai Red Prawn Curry"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p>4 tbsp Thai Red Curry Paste (Maesri can best)<br \/>\n2 large garlic cloves , minced (or 2 tsp paste)<br \/>\n2 tsp fresh ginger, finely grated (or paste)<br \/>\n1 tbsp lemongrass paste or finely chopped fresh<br \/>\n3 tbsp vegetable oil<br \/>\n1 cup chicken broth\/stock<br \/>\n400 ml coconut milk (full fat)<br \/>\n6 kaffir lime leaves<br \/>\n1 tbsp sugar<br \/>\n2 tsp fish sauce<br \/>\n750g-1kg prawns, peeled, cleaned &amp; deveined, tails on<br \/>\n120g green beans , trimmed and cut into small pieces<br \/>\n12 Thai basil leaves<br \/>\nGarnishes (optional)<br \/>\nFresh red chilli slices<br \/>\nFresh coriander<br \/>\nLime wedges to squeeze over curry<br \/>\nSteamed jasmine rice<\/p>\n<h2>Method<\/h2>\n<p>Heat oil in a large heavy based pan over medium high heat.<br \/>\nAdd curry paste (I used 3\u20444 of the can as I didn&#8217;t want it too spicy) lemongrass, garlic, and ginger, and cook for about 2 minutes so it \u201cdries out\u201d<br \/>\nAdd chicken stock and stir to dissolve paste. Simmer rapidly for 3 minutes or until liquid reduces by half.<br \/>\nAdd coconut milk, lime leaves, sugar, and fish sauce. Stir, then add Prawns &amp; beans.<br \/>\nSpread prawns out, bring to simmer, then turn heat down to medium. Simmer for about 6-8 minutes or until Sauce reduces, the prawns are cooked, and the sauce is almost at the thickness you want.<br \/>\nDo a taste test. Add more fish sauce to add more saltiness and sugar for sweetness.<br \/>\nRemove from heat.
