Leave aside.<br \/>\nTo a large bowl, beat the eggs, sugar, and vanilla until lightly pale.<br \/>\nThen add oil and beat for a minute.<br \/>\nAdd in the flour mixture.<br \/>\nBeat until combined.<br \/>\nPour into a sprayed and lined tray ( 36x23cm ) baking tray.<br \/>\nBake in a preheated oven for 15 minutes.<br \/>\nWhile the swiss roll is baking, lay a large, clean, dry tea towel on your work surface.<br \/>\nSieve a thin layer of icing sugar over the towel.<br \/>\nOnce the swiss roll is baked, immediately as you take it out of the oven, invert and place it on top of the tea towel over the icing sugar.<br \/>\nImmediately remove the baking paper and sieve the top generously with icing sugar, too.<br \/>\nRoll into a tight swissroll and allow to cool to room temperature under the tea towel.<br \/>\nOnce cooled.
