To a bowl, add the sugar and mix in the lemon zest<br \/>\n2. Sift in the flour and baking powder<br \/>\n3. Mix the dry ingredients together<br \/>\n4. Add the oil, lemon juice, oat milk and eggs and mix well<br \/>\n5. Add the blueberries and fold them into the batter<br \/>\n6. Pour the mixture into a tin lined with baking paper<br \/>\n7. Bake at 180C for 40-50 minutes, or until a skewer comes out clean<br \/>\n8. Let the cake cool then dust icing sugar on top<br \/>\n9.
