Slice liver into 1-2 mm thin slices on a cutting board with a sharp knife.<br \/>\nPour sliced liver into a strainer, wash with cold running water to get rid of most of the blood then let it rest for 5 mins for the blood to drain.<br \/>\nAdd 1 tsp salt &amp; let it rest in the refrigerator for 30 mins.<br \/>\nMeanwhile, mix spices, remaining salt &amp; flour together in a shallow plate.<br \/>\nHeat enough oil in a cast iron or heavy metal pot on medium high.<br \/>\nPlace rested liver into the flour mixture (in 4 batches) &amp; fry for 1-2 mins till golden brown.<br \/>\nRemove &amp; drain on kitchen towels, taste to determine if an extra sprinkle of salt is needed.<br \/>\nServe as they are, with dipping sauce of choice or chopped onion, tomato, pepper (hot or sweet) &amp; sumac.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Ingredients 500 g fresh beef liver 2 tsp cumin powder 1 tsp garlic powder 1 tsp chilli powder 2 tsp salt (divided) 1\/2 tsp freshly ground black pepper 2 cups flour\/starch of choice enough neutral flavoured oil (for frying) Steps Wash liver &amp; pull off its membrane.
