{"id":2606,"date":"2022-03-08T08:50:00","date_gmt":"2022-03-08T00:50:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=2606"},"modified":"2026-03-09T21:03:27","modified_gmt":"2026-03-09T13:03:27","slug":"bechamel-croquettes-wondernonieskitchen","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/bechamel-croquettes-wondernonieskitchen","title":{"rendered":"B\u00e9chamel Croquettes"},"content":{"rendered":"<h2>B\u00e9chamel Binder Ingredients<\/h2>\n<p>6 tbsp butter<br \/>\n5 tbsp AP flour<br \/>\n4 cups milk (warmed to 35 deg C)<br \/>\n1 tsp salt<br \/>\n1\/4 tsp ground black pepper<\/p>\n<h2>Steps Make B\u00e9chamel Binder<\/h2>\n<p>To make b\u00e9chamel base, melt butter in a pot on medium high heat.<br \/>\nAdd flour, stir well for 3 mins till it turns light brown &amp; remove from heat.<br \/>\nAdd 1\/4 of warm milk, salt &amp; pepper, whisk vigorously &amp; continue adding milk in batches until a thick paste is formed.<br \/>\nTaste for seasoning, transfer into 2 big bowls (divide equally) &amp; set aside to cool.<\/p>\n<h2>Leek, Mushroom &amp;Amp; Cheese Ingredients<\/h2>\n<p>1 tbsp oil<br \/>\n2 leeks (finely sliced)<br \/>\n1 cup mushrooms (finely diced)<br \/>\n1\/4 tsp salt (to taste)<br \/>\n1\/8 tsp ground black pepper (to taste)<br \/>\n1\/2 cup mozzarella (grated)<br \/>\n1 bowl b\u00e9chamel binder (above)<\/p>\n<h2>Steps<\/h2>\n<p>In a pan, heat oil on medium high, add leek, cook for 5 mins, add mushrooms &amp; cook for 10 mins till they have caramelised at the edges.<br \/>\nSeason, taste &amp; remove from heat.<br \/>\nAdd to cooled b\u00e9chamel mixture, add cheese &amp; stir for 1 min.<\/p>\n<h2>Curried Corn &amp;Amp; Peas Ingredients<\/h2>\n<p>1 tbsp oil<br \/>\n1 onion (finely diced)<br \/>\n2 cloves garlic (grated)<br \/>\n1 inch ginger (grated)<br \/>\n1 tsp curry powder<br \/>\n1\/2 cup corn (fresh or frozen)<br \/>\n1\/2 cup peas (fresh or frozen)<br \/>\n1 bowl b\u00e9chamel binder (above)<\/p>\n<h2>Steps<\/h2>\n<p>In a pan, heat oil on medium high, add onion, garlic &amp; ginger, fry for 5 mins.<br \/>\nAdd curry powder, fry for 2 mins, add vegetables, cook till tender &amp; remove.<br \/>\nAdd to cooled b\u00e9chamel mixture &amp; stir for 1 min.<\/p>\n<h2>Finishing<\/h2>\n<p>To start shaping, transfer mixture into a cling wrapped tray or mould, cover &amp; chill for 1 hr.<br \/>\nRemove, shape into small cylinders or balls &amp; chill for another 10 mins.<br \/>\nContinue<\/p>\n","protected":false},"excerpt":{"rendered":"<p>B\u00e9chamel Binder Ingredients 6 tbsp butter 5 tbsp AP flour 4 cups milk (warmed to 35 deg C) 1 tsp salt 1\/4 tsp ground black pepper Steps Make B\u00e9chamel Binder To make b\u00e9chamel base, melt butter in a pot on medium high heat.
