{"id":25634,"date":"2023-09-06T11:54:00","date_gmt":"2023-09-06T03:54:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=25634"},"modified":"2026-03-09T20:25:09","modified_gmt":"2026-03-09T12:25:09","slug":"eggplant-lasagne-normasfooddiary","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/eggplant-lasagne-normasfooddiary","title":{"rendered":"Eggplant Lasagne"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p><strong>Meat Sauce:<\/strong><br \/>\n1 tablespoon olive oil<br \/>\n1 onion, finely chopped<br \/>\n1 carrot, grated<br \/>\n4 cloves garlic, minced<br \/>\n700g beef mince<br \/>\n1 can diced tomato<br \/>\n1 bottle Passata<br \/>\n2 beef stock cubes or powder<br \/>\n1 teaspoon each dried oregano and basil<br \/>\n1 cup water<br \/>\nHandful Fresh basil leaves<br \/>\nSalt and pepper, season to your taste<br \/>\n<strong>Lasagne layers:<\/strong><br \/>\n3 eggplants, peeled and thinly sliced<br \/>\nFresh lasagne sheets (I did 4 layers)<br \/>\n500g mozzarella cheese, shredded<br \/>\nFresh basil leaves &amp; Italian herbs<br \/>\n<strong>Note :<\/strong><br \/>\nMy dish was about 9x6inch, so it&#8217;s not that large.<\/p>\n<h2>Steps<\/h2>\n<p><strong>Meat Sauce:<\/strong><br \/>\nHeat oil in a large pot over medium heat, add onion, and cook until golden &amp; softened. Add in the garlic and saute\u0301 for about 1 minute, until fragrant.<br \/>\nAdd beef and cook while breaking it up with the end of your spoon until browned and water evaporates.<br \/>\nAdd shredded carrot, stir to combine.<br \/>\nAdd canned tomatoes, passata, stock powder, and dried herbs. Mix well to combine and bring to a gentle simmer.<br \/>\nSeason with the desired amount of salt and pepper. Cover and cook for about 30-40 minutes, occasionally mixing, until the sauce has thickened slightly and meat is tender.<br \/>\nAdjust salt, pepper, and dried herbs to your taste. Top with fresh basil and water. Stir.<br \/>\n<strong><em>For the eggplant,<\/em><\/strong> sprinkle with salt, after 30mins remove excess water with a paper towel and fry until golden. Place on paper towels to absorb oil.<\/p>\n<h2>To Assemble<\/h2>\n<p>Preheat oven to 180c. Spoon about 1 cup of meat sauce on the base of a baking dish, then cover with lasagna sheets.
