Cook mince and set aside in a bowl.<br \/>\nSlice tomatoes<br \/>\nSlice eggplants long ways as per video. Add salt and let them stand for 10 minutes. You will see moisture release. Use kitchen paper to dab them and remove moisture.<br \/>\nDeep fry your eggplant in batches. Set aside on a plate with kitchen paper once cooked.<br \/>\nLine your pot with first. Tomatoes, then the mince, then the eggplants ( see highlights)<br \/>\nAdd Potatoes, Chicken then your rice.<br \/>\nIn a large pot add Water and a Chicken stock cube and dissolve.
