{"id":25273,"date":"2023-08-19T11:35:00","date_gmt":"2023-08-19T03:35:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=25273"},"modified":"2026-03-09T20:25:54","modified_gmt":"2026-03-09T12:25:54","slug":"fenugreek-methi-and-sweetcorn-curry-cooksbyson","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/fenugreek-methi-and-sweetcorn-curry-cooksbyson","title":{"rendered":"Fenugreek (Methi) And Sweetcorn Curry"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<p>3 tbsp vegetable oil<br \/>\nAround 3 large handfuls of frozen sweetcorn<br \/>\n1 medium sized onion (diced)<br \/>\n2 large tomatoes chopped into small chunks<br \/>\n10 Cashews soaked in boiling water<br \/>\n1 tbsp ginger &amp; garlic paste<br \/>\n1 tbsp jeera seeds<br \/>\n5 tbsp dried fenugreek leaves<br \/>\nHalf a tsp turmeric powder<br \/>\n1 tsp Kashmir Red Chili powder<br \/>\n1 tsp coriander Powder<br \/>\nHalf a tsp garam masala powder<br \/>\n2 tsp salt<br \/>\n1 tsp sugar<br \/>\n2 tbsp honey<br \/>\n50ml milk<br \/>\n3 tbsp butter<\/p>\n<h2>Steps<\/h2>\n<p>1. In two separate bowls, soak the frozen sweetcorn and cashews in boiling water and set aside.<br \/>\n2. Heat the oil in a pan and fry the jeera seeds until aromatic. Then add the diced onion until translucent. Mix in a tsp of methi leaves, with the ginger and garlic paste, powders and the chunks of tomato. Allow to soften and add the cashews for a few minutes more.<br \/>\n3. Transfer the mix into a blender and blitz to a fine sauce, (add a little water to loosen) before adding back to the pan and allowing it to simmer on a medium flame.<br \/>\n4. Add in the honey, butter, milk and sugar and allow to simmer once more for a further 10 minutes. Drain the sweetcorn from earlier and add to the pan, mixing well before covering the pan and leaving to cook for a further 20mins. (Add a tsp of salt if preferred.)
