{"id":24662,"date":"2023-07-26T09:50:00","date_gmt":"2023-07-26T01:50:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=24662"},"modified":"2026-03-09T20:27:11","modified_gmt":"2026-03-09T12:27:11","slug":"pesto-arancini-balls-whenmeateatsveg","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/pesto-arancini-balls-whenmeateatsveg","title":{"rendered":"Pesto Arancini Balls"},"content":{"rendered":"<h2>Ingredients For Risotto<\/h2>\n<p>250g Aborrio Rice<br \/>\n500ml Vegetable Stock<br \/>\n3 Garlic Cloves (chopped)<br \/>\n1 Knob of Butter<br \/>\n1\/2 Tsp Paprika<br \/>\n1\/2 Tsp Pepper<br \/>\n1\/2 Curry Powder (optional)<br \/>\n1 Tbsp Lemon Juice<\/p>\n<h2>Pesto Sauce<\/h2>\n<p>60g Basil<br \/>\n30g Parmesan<br \/>\n10 Cashew Nuts<br \/>\n1 Tsp Salt<br \/>\n3 Garlic Cloves<br \/>\n100 ml Extra Virgin Oil (@terradelyssa_uk )<\/p>\n<h2>Crumb Coating<\/h2>\n<p>Panko Breads Crumbs<br \/>\nEgg Whites<br \/>\nCooking Oil<br \/>\nCheese Cubes<\/p>\n<h2>Method<\/h2>\n<p>1. Melt butter on medium heat adding garlic. Once fragrant mix in the paprika, curry powder and pepper. Add the lemon juice and Arborio rice mixing until slightly toasted.<br \/>\n2. Add in vegetable stock in parts of 100ml and cook for high heat. When the stock reduces repeat this step again until the arborio rice is cooked through and the stock has reduced.<br \/>\n3. Spread the risotto on a flat pan and transfer to the fridge to cool and become more sticky so we\u2019re able to mould into balls<br \/>\n4. For the pesto sauce, place the basil, Parmesan, cashew nuts, salt and cloves in the food processor and gradually add in the extra Virgin oil. You may need to scrap the sides every so often<br \/>\n5. After a few hours, take out the cooled down risotto from the fridge and scoop half a palm sized amount flattening in your hand. Place a Tsp amount of pesto sauce with a block of cheese. Take another half a palm sized amount of risotto and place on top using your hands to make a ball mould<br \/>\n6. Freeze for an hour and then coat in flour, egg white and panko breadcrumbs. Feel free to do a second coat. Freeze for 3 hours<br \/>\n7. Heat cooking oil on high heat and place the frozen Arancini balls for 3-5 minutes<br \/>\n8.
