{"id":24625,"date":"2023-07-24T09:00:00","date_gmt":"2023-07-24T01:00:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=24625"},"modified":"2026-03-09T20:27:17","modified_gmt":"2026-03-09T12:27:17","slug":"chilled-watermelon-tomato-gazpacho-anexplorerskitchen","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/chilled-watermelon-tomato-gazpacho-anexplorerskitchen","title":{"rendered":"Chilled Watermelon &amp; Tomato Gazpacho"},"content":{"rendered":"<h2>Ingredients Soup<\/h2>\n<p>5 heaping cups of chopped watermelon<br \/>\n4 cups deseeded, chopped plum tomatoes<br \/>\n4 cups chopped cucumbers, with skin<br \/>\n1 large red bell pepper, chopped<br \/>\n1 cup sliced green onions<br \/>\n2 whole garlic cloves, freshly peeled<br \/>\n5 large basil leaves<br \/>\n8 Tbs good Sherry vinegar<br \/>\n1\u20442 cup plus 2 Tbs good olive oil<br \/>\n2-2 1\u20442 salt<br \/>\n1 tsp fresh ground pepper<br \/>\n1\u20442 jalapen\u0303o, de-seeded<\/p>\n<h2>Toppings<\/h2>\n<p>All chopped into half inch pieces<br \/>\n1\u20443 cup, deseeded plum tomatoes<br \/>\n1\u20443 cup, deseeded watermelon<br \/>\n1\u20443 cup, deseeded orange or yellow pepper<br \/>\n1\u20443 cup, chopped cucumber<br \/>\n1\u20443 cup chopped avocado<br \/>\n1\/4 cup finely sliced green onion<br \/>\nLebne, sour cream or Greek yogurt<br \/>\nGood olive oil to drizzle<br \/>\nParsley<br \/>\nFresh ground pepper<\/p>\n<h2>Directions<\/h2>\n<p>1. Combine all soup ingredients in blender. You will need to add in 3 separate batches. Blend well until liquified.<br \/>\n2. Pour into a pitcher &amp; chill for a minimum of 3 hours. This can be made the day before.<br \/>\n3. Before serving, top with chilled, chopped veggies, fresh parsley and 1\u20442-1 tsp Lebne, sour cream, Greek yogurt or vegan alternative.
